Apple/Fennel Salad with Pecorino/Hazelnuts/Cranberries/Ice Wine Vinaigrette Fennel/Apple/Pecorino/Hazelnuts/Cranberries/Green Olives/with Ice Wine Vinaigrette Ingredients 1 Fennel Bulb sliced very thin 1 Honey Crisp Apple sliced very thin Pecorino Cheese Hazel Nuts Green Olives Arugula Cranberries 1 Lemon Vinaigrette 3 tablespoons Ice Wine 3 tablespoons vegetable oil Salt, pepper 1/4 teaspoon DiJon Mustard 1 tablespoon white wine vinegar 1 tablespoon sugar Directions Whisk ice wine, lemon, salt, pepper, mustard sugar and white wine vinegar together until well combined. Slowly drizzle in the oil until the mixture emulsifies. Slice the Fennel and Apple very thin - soak the apple in lemon juice until just before serving. Start with a handful of arugula, place on a platter. place the fennel and apple slices over the arugula Scatter some hazelnuts, dried cranberries and green olives (halved) over the top Shave pecorino cheese Pour the vinaigrette over the top And eat!
